EQ is very important but when is it time not to over-EQ? How do you know when to stop to overcome this common situation?

I have no idea. I originally came from the "less is more" belief of mixing/producing, but the more I learned, the more processing I used ... the more my recordings sounded like the pros. So I think it's actually very rare for a "clean" signal to end up in a final mix.

The truth is, how we hear stuff changes radically depending on the person, the environment (the room, the stuff in the room), the angle and distance from the source ... so there's no "one true" representation of any single sound sample. But rather, one perspective of that sound. And to faithly reproduce that perspective (or illusion of perspective) requires signal processing.
